Ingredients
1 pound large shrimp, peeled and deveined
-
2 tablespoons Jamaican jerk spice blend
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon grated fresh ginger
Wooden skewers, soaked in water for 30 minutes
Directions
In a bowl, mix together the Jamaican jerk spice blend, olive oil, soy sauce, honey, lime juice, minced garlic, and grated ginger to create the marinade.
Place the peeled and deveined shrimp in a shallow dish and pour half of the marinade over them, ensuring each shrimp is well coated. Cover the dish and let it marinate in the refrigerator for at least 30 minutes.
Preheat your grill or grill pan over medium-high heat.
Thread the marinated shrimp onto the soaked wooden skewers.
Grill the skewers for about 2-3 minutes per side, or until the shrimp are opaque and cooked through.
While grilling, brush the remaining marinade over the shrimp skewers for added flavor.
Once cooked, remove the skewers from the grill and let them rest for a minute.
Serve the Jamaican Jerk Shrimp Skewers with additional lime wedges and a side of pineapple salsa or a refreshing cilantro-lime dipping sauce.
