Berbere Spiced Vegan Chickpea Stew
Ingredients
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced

2 tbsp berbere spice
1 can (15 oz) diced tomatoes
1 can (15 oz) chickpeas, drained and rinsed
4 cups vegetable broth
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Directions
In a large pot, heat olive oil over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
Stir in the berbere spice, cooking for another minute to toast the spices.
Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a simmer and let cook for 15-20 minutes to allow the flavors to meld together.
Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro.
