Ancho Spicy Chicken Skewers with Creamy Chipotle Dip

Serve these ancho spicy chicken skewers with the creamy chipotle dip on the side. Enjoy with a side of Mexican rice and black beans. Top them off with a fresh squeezed lime !
Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons ancho powder
1 teaspoon garlic powder
1 teaspoon onion powder

1 teaspoon smoked paprika
Salt and pepper to taste
Wooden skewers, soaked in water for 30 minutes
1/2 cup mayonnaise
1 tablespoon chipotle peppers in adobo sauce, minced
1 tablespoon lime juice
Directions
In a large bowl, combine the ancho powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken cubes and toss until evenly coated. Thread the seasoned chicken onto the skewers
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for 12-15 minutes, turning occasionally, until cooked through and slightly charred.
In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, and a pinch of salt to make the creamy chipotle dip.
Serve the ancho spicy chicken skewers with the creamy chipotle dip on the side. Enjoy with a side of Mexican rice and black beans
