Vindaloo is an Indian curry based on a famous Portuguese inspired dish that roughly translates to "meat marinated in garlic and wine". This Spice blend is most popular in parts of Western India. This one is made famous by its heat, offered at nearly every curry house across England.
Start with sautéing your favorite protein and vegetables in a large sauce pan. Add two tablespoons of vindaloo to two cans of coconut milk and a half cup of vegetable or chicken stock. Simmer on stove top. The sauce will reduce and thicken slightly. Salt to taste. Serve over rice or baby spinach.
